The Azkabanwich

On July 31st we had a birthday party for “the boy who lived” aka Harry Potter. It was one of our favorite parties yet, so be on the lookout for an entire post about it in the future.

One of the best aspects of the evening was the FOOD! Butterbeer, chocolate frogs, and the massively popular Azkabanwich. This sandwich was a huge hit. Lucky for you, our head chef, Chef Gary, is letting us share the secret recipe today. (Although this is a Harry Potter themed entrée, it’s delicious for any occasion!)



Azkabanwich

A sweet and spicy chicken sandwich that’s just hot enough to keep the dementors away!
Recipe yields: 4 servings

Ingredients

Stone Ground Ciabatta Bun
Green Leaf Lettuce
Tomato, slice
Red Onion, slice
Pickles, sliced
Provolone Cheese, sliced
Bacon, strip
Secret Sauce
Secret Sauce Ingredients

Mayonnaise

Buffalo Sauce
Pepper, Cayenne
Green Chilies (Finely Chopped)
Jalapeno, Fresh (Finely Chopped)
Pickle, Chips (Finely Chopped)
Pickle Juice
Lime Juice
Ketchup

Directions
Start with a clean and dry work surface. Lightly spray non-stick spray on hot grill or skillet to prevent sticking.



Place chicken breast on grill in the hottest spot. Season each piece with cayenne pepper. Cook, flipping occasionally. It should take about 6 minutes until internal temperature holds 165 degrees fahrenheit for 15 seconds.



While the chicken is cooking, make the secret sauce. Combine all ingredients in a medium mixing bowl. Whisk until well combined. You may decide to adjust the amount of ketchup, pickle juice and jalapeno based upon your preference to spicy or sour and sweet foods.


Once the sauce is done, toast the buns in an oven at 450 degrees fahrenheit for 1 minute until light brown. Once the buns are done toasting, slather the secret sauce on the top and bottom of each bun. Then place a piece of lettuce on the bottom bun followed by two tomato slices, two red onion slices, and three pickles.



When the chicken has reached the proper temperature, place 1 slice of provolone cheese on each piece of chicken and move to cooler part of skillet to melt the cheese. Once melted, remove the chicken from heat and place on top of the pickles. Finish the burger by placing the bacon crisscross on top of the chicken and then add the top bun. Serve immediately.
